Roasted Asparagus

A Little Bit About Asparagus:
• Can be harvested in three different colors:
green, white, and purple
• Requires three years from planting to
establish permanent roots and produce
quality spears
• Good source of vitamin C
• Excellent source of folate and vitamin K
An asparagus farm…

Step #1
Gather the following items:
Olive Oil
Kosher Salt and Black Pepper
Colander, Cutting Board, Sharp Knife
Sheet Pans
Step #2
Rinse the asparagus thoroughly.
Step #3
Sanitize your work area.
Cut 1-inch off the end of the asparagus
to remove the woody stalk.
Step #4
Toss the asparagus with olive oil,
Kosher salt, and black pepper
(see WebSMARTT recipe for ingredient
amounts based on your projected servings)
Step #5
Place asparagus spears on
parchment lined sheet
pans and roast in a 350° F
oven for 8-10 minutes or
until asparagus is bright
green and just tender.
Step #6
To Hold:
For highest quality, prepare asparagus just
before service. Hold asparagus in warmer
at 140° F.
To Serve:
Serve on the serving line.
Portion = 1 spear
To Store:
All leftovers should be thrown away.
